Preheat the oven to 180°C
Using an oven proof pan, on a medium heat, fry the spring onions in the olive oil and butter until soft. Add in the spinach and stir fry until almost defrosted.
Add the garlic and spices and continue to stirfry.
Salt and pepper to taste
Add the feta and the eggs and cook until just set on the bottom then pop in the oven to finish the cooking.
Serve on it's own or as a veggie add-on
