Spicy vegetable soup with dumplings


  • 2 cups broth
  • 1 parsnip peeled and sliced into ribbons
  • 1 carrot peeled and sliced into medalions
  • 1 cup green beans topped and tailed and cut in half
  • 1/2 a leek sliced into thin ribbons
  • 1 tin sweet corn
  • 2 dried chillis
  • water to cover
  • salt and pepper to taste
  • 6-7 dumplings
  • 1 tbs soy sauce


  • Put all the ingredients except the dumplings and soy sauce into a large pot.
  • Bring the pot to the boil on a high heat and once it's bubbling drop to a low medium heat to continue simmering. The longer it simmers the better.
  • Put the dumplings in according to the cooking time instructed on the packaging.
  • Before serving, add soy sauce and taste to make sure the seasoning is right.
