Veg loaded spagbol – a simple recipe


  • 1/2 a large onion diced
  • 1 tbs olive oil
  • 2 cups Country harvest veg cauliflower, broccoli, carrots, green beans
  • 500 g lean mince
  • 500 g Ostrich mince
  • 1 sachet tomato paste
  • 1 tbs crush garlic
  • 1 tin italian style tomatoes or plain tinned tomatoes and add basil and origano
  • 1 1/2 tins water
  • 2 tsp Paprika I used hungarian
  • salt and pepper to taste
  • Hard cheese to sprinkle


  • On a medium-high heat fry the onion until translucent
  • Add the veggies and cook until soft
  • Add the mince a little at a time and brown
  • Add garlic and tomato paste and cook out the tomato paste for about 1 minute
  • Add the tinned tomatoes and water and stir well
  • Add the paprika, salt and pepper.
  • Bring the heat down and allow to simmer for as long as possible (the longer the simmer the deeper the flavour)
  • Serve with your choice of sauce soaker and sprinkle with a strong hard cheese:)
