Coconut crusted quiche


  • For the crust
  • 1 cup coconut flour
  • salt
  • pepper
  • 1 tbs coconut oil
  • 6 eggs
  • For the filling
  • 4 eggs
  • 1/2 cup milk/coconut milk
  • 1 cup cooked and drained spinach
  • 1/2 cup feta
  • Salt and pepper to taste


  • For the crust
  • Preheat the oven to 160 degrees C. Mix together the flour with the seasoning. Combine the dry mixture with the coconut oil (I use my fingers, you can use a mixer). Add the eggs one at a time until combined. Press into a baking tin and put in the oven until almost golden. Remove from the oven and bring the temperature up to 180 degrees
  • For the filling
  • Whisk together the eggs and milk. Put in the spinach and feta and mix well. Taste and season liberally. Pour into crust and place into the oven until set.
