Most people I know really want to eat healthy. No really. It’s possible that over the years I have become friends with more healthy people but I also think that healthy eating has become an agenda for a lot of people.

So most people I know WANT to eat healthy, a lot of the time though they don’t. Junk food, fast food, “treats” all have 2 very important things in common, they are easy to get in your face (open a packet, order Mr D, pop through the drive through) and they are made to hit the “Bliss point“, basically just the right balance of salt, sugar and fat to trigger the reward part of your brain. These two things (with a few other guest appearances from things like “it’s free”, “I paid extra so I will eat extra”, “I was offered”, etc) make it very difficult to say no to the right stuff.

I also want to eat healthy. I need to eat healthy and I often fall into the trap I described above. I also really like veggies. When I have them on my plate, and they are made correctly, I really enjoy them. The issue is getting them on my plate, taking that step to make a veggie side or incorporate them into my meal. It doesn’t help that TheHusband is not a fan of vegetables so if I make a side salad I end up having to either eat too much of it or throw away a good portion of it because I am incapable of making a small side salad.

I can feel when I haven’t been gettign enough veggies. My body just does not work the right way, my energy is low, my sleep is not great and I start craving all the wrong things all the time. It becomes a vicious cycle because I don’t have the energy to make all the thing, I end up making pasta with cheese or ordering in. I need to break the cycle with something easy, delicious and quick to make.

Cue spinach. I always have a bag of frozen spinach in my freezer because spinach is one of the easiest vegetables to cook quickly or to incorporate in other foods. Sauces, soups and side dishes, it’s also great for stuffing chicken breasts. It’s natural partner in flavour is cheese, more specifically feta but most cheeses work well with spinach. From there your imagination can go wild. I would say that my imagination didn’t go too crazy when this recipe came to mind a while back but it has been a go to recipe since because what makes these the ultimate veggie add-on is that they are packed full of flavour without packing in the calories.

The secret is in the seasoning, garlic and spring onions. That really is the secret to most amazing, filling food.

What is your go-to veggie add-on?

Spinach and Feta squares


  • 2 spring onions finely chopped
  • 1 tsp butter
  • 1 tbs olive oil
  • 1 cup frozen spinach
  • 1 teaspoon garlic
  • 1 tsp paprika
  • 1/2 tsp smoked paprika
  • 4 eggs whisked
  • 1/4 cup feta crumbled
  • Salt and pepper to taste


  • Preheat the oven to 180°C
  • Using an oven proof pan, on a medium heat, fry the spring onions in the olive oil and butter until soft. Add in the spinach and stir fry until almost defrosted.
  • Add the garlic and spices and continue to stirfry.
  • Salt and pepper to taste
  • Add the feta and the eggs and cook until just set on the bottom then pop in the oven to finish the cooking.
  • Serve on it's own or as a veggie add-on
