Ever since I tried my hand at roasting my own chicken, quite late in life I might add, I have been doing the same thing. Smotherin the bird in lemon, butter and garlic.
Now, there is absolutely nothing wrong with lemon, garlic and butter ona roast chicken and it’s a delicious, indulgent roast of the best kind BUT I was after something a little lighter on the calories with just as much or even more flavour
I looked around at different options amd in my usual style, gathered some ideas from a few different sources, checked what I had available in my kitchen and then followed my heart.
This is a super easy recipe which can be sinply tweaked according to your personal tastes

Herby roast chicken
This simple but delicious roast chicken recipe will hit all the right spots
Equipment
- stove
- roasting pan
- knife
- small bowl or cup
Ingredients
- 1 whole Chicken skin on
- 1 whole lemon cut in half
- 1 tbs olive oil
- 2 cloves garlic crushed
- 2 tsp mixed herbs fresh
- salt and pepper to taste
Instructions
- Preheat the oven to 180 degrees C
- Pat the chicken dry
- Put half the lemon in the chicken cavity
- Squeeze the juice if the other half into a bowl, mix in the other ingredients
- Rub the mixture all over the chicken, allowing some to go into the cavity
- Place in the oven, breast plate down for 20min x 500g + 20min more
- Remove from the oven and tent with tinfoil allowing it to rest for 10min
- Serve with your choice of veg and starch
